Vegas Traditions

After working in Vegas for 7 straight years at the Cowboy Christmas for Stoecklein Publishing. This year Dave decided not to take a booth. I’ve been reminiscing about a few of my favorite Vegas traditions from over the years
  • Love the Drive….silly…I know….but it’s an easy drive and I get to put in some quality bonding time with my favorite Texas Country music.
  • Eliminator Pen in the Saddle Bronc Riding! I Love Eight Ball!
  • Nevada Cowboys along the Trail
  • Seeing Tradeshow Family: Love all the Montana Friends, John & Penny Reedy ~ Best of the West, Sandi's Leather, JM Capriola's, Custom Cowboy Shop, and so many friends that get together to be neighbors for a few weeks!
  • Spending time with my Tiffany!
  • Seas of Cowboy Hats moving through the city of sky scrapers
  • Oxygen Bar...looks silly...sounds silly....I LOVE LOVE LOVE it!
    There are pictures of this somewhere...but ....lol....I must have hid them for blackmail
  • Wearing PARTY PANTS
  • Cheese Burgers in Paradise
  • PF Changs : Mongolian Beef with Sugar Snap & Changs Spicy Shrimp!
  • Waving like a Queen from the escalators and greeting casino patrons “Thank You, Thank You all for coming

  • All the amazing friends that stop to say HELLO at the booth
  • Working with great people for 2 weeks!

Down a Dirt Road

Driving down the dirt road I see this....

Some sort of horse drawn vehicle...with tires dragging (my guess is for weight so the broncs don't run off. Also works as a handy road grater :)


Yes.....he's talking on his phone! lol


He did pull the team over to the other side of the road so I could pass
Not to be out done by my father for poor driving habits....

I hurried....passed him....and stopped in front of him ....opened the sunroof so I could stand up & take a picture of the team coming towards me....with my phone :)

Love my Dad! When he got to the house his 1st question was...Did you get my picture!?!

Cheesy Card Game Chip Dip

Cheesy Corn Card Game Chip Dip

This summer I had the privilege of attending an amazing Stoecklein Photography workshop. While I was there, not only did we learn amazing things about photography but we ate three of DELICIOUS meals every day!

THANK YOU so much to Mrs Mary Stoecklein for taking such great care of us. Here is a one of the delicious appetizers that we dined on.

Here is the directions Mary was kind enough to hand write for me:

Corn Dip:
1 Cup Mayo
2 Cups Shredded Jack Cheese
1/4 Cup Grated Parmesan Cheese
1 4 ounces can of Pimentos
1 Can Mexican Corn
2 cans (4 ounces) Chopped Chiles

Preheat Oven 350 degrees
Drain chiles, pimentos, and corn.
Mix all ingredients together.
Place in 350 degree oven for 30 minutes
(or Microwave if you like :)
Serve with Scoops!

Here is my humble attempt to recreate this delicious dip!
Fun friends that will combine to make DELICIOUSNESS!
Handy Dandy little salad shooter grates up block cheese quick as can be.

Rebel, without a cause...I used I cup Colby Jack & 1 cup Pepper Jack

1/4 cup Grated Parmesan
Add in 4 oz jar of Pimentos
Thank you to Aunt Nancy for picking these up from the grocery story.
To be quite honest...I didn't even know what they were before this recipe!

1 can Mexicorn! Delicious!
(To make the dip go a little farther you can add 2 cans....I love corn!)
TWO 4oz cans of Chopped Green Chiles
1 cup Mayo
Stir it all together.
Yes, I know you really didn't need a picture of stirring but I just love the colors all swirling together! So pretty!
Throw it in your favorite Bucking Horse dish

Bake in oven at 350 degrees for 30 minutes!
Ta Da! You have a DELICIOUS Cheesy Corn Dip for the Party!
Enjoy!

Cheesy Corn CARD GAME CHIP Dip:
1 Cup Mayo
2 Cups Shredded Jack Cheese ( I used 1 cup colby jack & 1 cup pepperjack)
1/4 Cup Grated Parmesan Cheese
1 4 ounces can of Pimentos
1 Can Mexican Corn ( You could double this to spread the dip farther)
2 cans (4 ounces) Chopped Chiles
(Want to add some heat....1 finely sliced Jalapeno Pepper!)

Preheat Oven 350 degrees
Drain chiles, pimentos, and corn.
Mix all ingredients together.
Place in 350 degree oven for 30 minutes
Serve with Scoops!

Best Brownies in the World

~ Best Brownies in the World ~ ....or atleast that is what I have scribbled on the tablet paper from college that the recipe is written on. This is one of my favorite brownie recipes. I used to make it in college all the time. Brownies from scratch, tasty, light, quick, easy, and delicious! (lol...everything you look for in a college experience)

Ingredients
2 cups Sugar
2 cubes margarine (or butter) SOFTENED
4 Eggs
2 tsp Vanilla
2 TBS Coco, heaping
2 cups Flour

(variation, add Andes Mints pieces into the batter before cooking)

Toppings ~ After cooled, sprinkle powdered sugar or ice


2 cups Sugar & 2 cups Flour
(lol...pretty sure that the original recipe says to put flour as the last ingredient but I was distracted by the card game going on...apparently ....this recipe is flexible)

Add 4 Eggs
I crack them in a seperate bowl in case I get a bloody egg.
(Which I thought was a wives tale....until I cracked an egg a few weeks ago and it was bad)
2 HEAPING TBS Coco
Seriously....I just take pictures cause I love to see the colors combining into deliciousness!

ADD ALL INGREDIENTS in list....regardless if I shown in picture :)
MIX IT ALL TOGETHER

In college, I would whip up a batch of brownies...however....I hated mixing the batter. Lol....often that task would be passed off to one of our buddies hanging out on the couch or bean bag. Pretty sure Colt C. came over with a hand blender....as a gift. He said...he didn't use it. Lol....I think he was just sick of having to stir the brownie batter.

Sometime remind me to tell you the story about the time Colt got gored by a bull :)
Grease a 8x10 pan. I spray pan with PAM

Living on the edge.... Tonight I broke up Andes Mints & pushed them down randomly throughout one side of the pan.

Bake at 350 degrees for 25-30 minutes
Ta Da! Delicious Homemade Brownies from scratch in no time!
I usually wait for it to cool and sprinkle with powdered sugar over the top.
You can also ice them :)

Today, the left side is Andes mint and then did a simple powdered sugar on the right side.

I would've got you a beautiful presentation picture of the finished product but the Card Game crowd devoured them :) You can't blame them. I didn't have a fire going yet and it was about 50 degrees in the house. Better weather to sell WILD Rags in ;)

Recipe Review:
Preheat Oven at 350 degrees
Grease 8x10 pan

Mix all Ingredients together thouroughly
2 cups Sugar
2 cubes margarine (or butter) SOFTENED
4 Eggs
2 tsp Vanilla
2 TBS Coco, heaping
2 cups Flour

Bake at 350 for 25 minutes, depending on your altitude. I use a tooth pick to test to see if it's done. If it comes out sticky...a few more minutes. At my house 29 minutes is about perfection.

(variation, add Andes Mints pieces into the batter before cooking)

Toppings ~ After cooled, sprinkle powdered sugar or ice
