I have wanted to share one of my all time favorite recipes for awhile. Well last night we had a wild girls night and made just that...IDAHO Cowboy Homemade Potato Soup! The base recipe is what my Mom used to make us. We don't make it the same....mainly because I am a lot lazier than her but I love it either way :)
IDAHO COWBOY ~ Homemade Potato Soup
PARTY GUESTS LIST:
4 cups Peeled & Cubed Potatoes
3 Cups Water
1 1/2 teaspoon Salt
1/8 teaspoon Pepper
1/4 teaspoon Thyme leaves dried ( I have NEVER EVER USED Thyme in the recipe)
2 Tablespoons Butter
2 Tablespoons Flour
3-6 Slices of Bacon (optional...ALSO, you can use left over ham from a big Thanksgiving meal :)
Wash & Peel!

Cube your delicious IDAHO Potatoes
(Please forgive the random photos camera is out of commission....
so we improvised with the flip phone camera :)
Boil Potatoes, salt, pepper, & thyme for 15 minutes or until potatoes are slightly tender. Drain & save potato broth. Mash half potatoes & leave half cubed. (The more mashed potatoes, the thicker the soup will be. When you're finished...You can also add milk to thin it down if needed)so we improvised with the flip phone camera :)
In a separate pot, Make a white sauce of 2 TBLS Butter & 2 TBLS Flour. Melt Butter on low. Stir in Flour until smooth. Next Stir in potato water broth slowly until smooth.
Cook Bacon until crispy. ( I cook mine on the George Foreman Grill. It drains the fat & makes clean up easy :) Let cool & Dice Cooked Bacon. (I don't always use bacon. This was a "Go To College Meal" because you pretty much can use potatoes, water, salt, and pepper to serve the masses. lol...like an Idaho "Stone Soup".
Stir in Bacon, mashed potatoes, cubed potatoes into broth & simmer until thick.
(I am super impatient & just add in ingredients & enjoy) Makes 4-6 Servings.
I usually double the recipe.
FUN TOPPINGS: Dallop of sour cream, grated pepperjack cheese, or crunched up tortilla chips
Good side dishes are: Bronc Rider to Breakfast Crossiants
or a
Pioneer Woman BBQ Bacon Wrapped Popper added to a ....GRILLED SANDWICH!
SERVE & ENJOY
