Red Coats and Winter Wonderlands ~ Recently, a friend posted a picture from that sent my mind reeling! 

It was bizarre really.....I vaguely recall what I did this morning let a lone years ago but this picture sparked the most random trip down memory lane and I just had to share! 

......Here we go!  Winter Flashback....home from college for some reason.....

Phone rings (lol….I think it was the land line at Mom’s), Dad needs me to come help him sort and load some horses.  He’s supposed to be headed to a photo shoot for but isn’t feeling good so if I just come help him get loaded he’ll be fine. 

Throw on some clothes and head to the corrals.  No one to impress, just going to help Dad load and then come back home. ( I should no better)

Sort, load…as the trailer door is being closed….Dad decides that he is too sick and can’t go.  I will have to drive the horses to the photo shoot.  

……Now as am in the pickup headed to this photo shoot….HOLY MACKREL….You haven’t showered….Your hair is in 2 braids like a little kid….and with your winter clothes on….it will be VERY HARD to distinguish you from a boy.  ( You think I'm being overly critical but the pictures don't lie.....lol....I think Dave even mentioned something about combing my hair ;)

I did get up make sure I got a shower in that night ….just so you know.  Knowing how Dave loves to shoot that glorious morning light.....Also, got up a lil’ bit earlier to clean up enough you could tell I was a girl. 

More Random Memories from the Day....

  • Beautiful red coat is definitely 10 times warmer than the white coat...just sayin!  
  • Dad wanted me to ride a stud colt.  Instead, once I got there, I rode the old broke horse, Rambo. (I'm super pea hearted) 
  • Rambo wacked his nose in the trailer and bloodied it a little and even though the stud colt looked prettier....I still rode Rambo.
  • During the shoot on the second morning, was so so cold.  Quite possibly the one on the coldest times I've ever had in a cowboy hat....right up there with a Dillon College Rodeo that it snowed at, Packing a flag at Chase Hawks Rodeo, and Riding at the Sheep Station)  
  • Dave told me that I needed to smile....I was certain that my face was frozen in postion and for my expression to change I would have to phyically change it with my hands and let it freeze that way.
  • One of the very prettiest scenes of the morning was right when the bright light was starting to hit the snow covered field.  We'd been running the horses around and everything was warmed up.  The gathered together and a pretty paint rolled in the snow. It was cold, crisp and the air crystals froze & shone all at the same time as the big ol horse froliced in the snow.  It was BEAUTIFUL and I don't think a single picture was captured of it. (Except in our pretty lil' minds)

 Later, we took some more shots back at the ranch, below you will notice a cute Christmas shot, Red Ribbons and all....my favorite tho is the horses ears.....pinned!    For those of you who have ever been around Hoggan Horses....I was quite certain that I was tempting fate by climbing on ol' paint bareback.  This picture makes me laugh every time.

The above photo, buddy Lincoln Zollinger and I....I think the conversation was something like....Lincoln....give Mindy a hug.  Lincoln was pretty sure that girls have cooties and that wasn't happening. 

 Pulling out of Zollinger's yard on the way home.....Drug the bottom of the trailer, broke the back end, and probably cost more money to repair than I made that weekend. (Dad was not impressed)

My Oh My, EGG NOG CREAM PIE


My Oh My EGG NOG PIE!
Happy New Years Eve Gypsy Trail Friends! 
I had an epiphany this month that I just had to share!!!  Ok, so maybe it wasn't an epiphany but a stoke of genius......or maybe just a fun, simple, and  mad scientist food creation at very least!

Christmas Vacation Drum Roll........rrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrrr....................
.................EGG NOG CREAM PIE!  Yes, that is right, one more use for that glorious Holiday Beverage!

Egg Nog Cream Pie 

~Party Guest List
  • 3 Cups Egg Nog
  • 1 Large Package Vanila Instant Pudding (5.1 oz) 
  • 1 Pie Crust ( Can be Grahmn Cracker, Traditional Pie Crust, Store bought or Homemade) 
  • Whipping Cream ( or Cool Whip...whatever makes your skirt fly up) 
  • Mixing Bowl, Spatulau, and Wisk
 
Egg Nog Cream Pie ~ Party Guest List

Follow PUDDING Directions and USE 3 Cups Egg Nog! 
It is super thick so it will still set up like the pie directions.

Pour 3 Cups Egg Nog in a mixing bowl

Add Pudding Powder to Egg Nog in bowl

WHISK Away at the mixture until you don't think you can whisk anymore!
3 Minutes seems to get it whipped into shape pretty good.

POUR Crazy Egg Nog Concoction into Pie Crust
A Spatula is very helpful to get the thick mixture off the sides of the bowl.


Resist the temptation to stick your thumb in it for a taste.
(You do have permission to lick the bowl that you are finished with:)

Lathe in a delicious WHIPPED CREAM TOPPING!

My Oh My EGG NOG PIE!!!
  Serve & Enjoy! 

Here is a quick version of the recipe without all the pictures :)
My Oh MY Egg Nog Cream Pie ~Party Guest List
  • 3 Cups Egg Nog
  • 1 Large Package Vanila Instant Pudding (5.1 oz) 
  • 1 Pie Crust ( Can be Grahmn Cracker, Traditional Pie Crust, Store bought or Homemade) 
  • Whipping Cream ( or Cool Whip...whatever makes your skirt fly up) 
  • Mixing Bowl, Spatulau, and Wisk
 Party Plan:

Add 3 Cups Egg Nog & 1 Large Package Vanilla Pudding to mixing bowl.  Whisk throughly for about 3 minutes.  Add Mixture to Pie Crust.  Spread generously Whipped Cream topping on top of Pie Filling. 
Serve and Enjoy or Chill & indulge later!


(Tips : For a milder taste, You use half milk and half egg nog for your pie filling mixture.  If doing so, use pie filling directions and only use 2 1/2 cups liquid)

Today I Am THANKFUL

LOVE this time of year and the attitude of gratitude that wafts through the air. Filling hearts, homes, and families with appreciation for the countless blessings pouring into our lives everyday! 

Here are a few moments that I am THANKFUL for:

Today I am thankful for matches. Seriously....they are awesome little fire startin dudes :) Lovin' a cozy home and wood heat. .........they are awesome Can you imagine trying to flint and stone up a spark every time you wanted a fire....I would freeze to death!

 Today I am thankful for bumpy gravel roads :) .....and getting to say....aaaaaaaaaaaaaaaa......as you bump down the road. Thankful for the simple little things in life that make you giggle.
 .......Usually, my lil' sister & my little cousin, play the "aaaaaa" game on the way down the gravel road to my Dad's. They are both 5 and you wouldn't believe the fun you can have playing that game for a mile down the road. Hahaha.....tonight I found myself hitting the washboards in the road & saying......aaaaaaaaaaaaaa.......all by myself. I'm easily amused. What can I say

 Today I am THANKFUL for Assuming the BEST from everyone you meet. Thankful for humbling life lessons that remind you that people are not always as they seem and they are usually always better than you think, if you expect the best and give them a chance. Blessed ♥

 TODAY I am THANKFUL for Power and all the heat, water, lights, and basic blessings that I take for granted everyday.

Today I am thankful for the scenery driving country roads.  Love to coming around a bend to a herd of goats or beautiful black cows grazing.  Love Idaho 


 Today I am THANKFUL a roof that is still on the Pink House in this wind! Thankful for warm fire to cozy up to after being outside. Thankful for not getting blown off the table we stood on to put a tire on the roof to keep the tin from blowing off the house :)

 Today I am Thankful for packages delivered to your door, wonderful Lil' Red Roan customers ordering, a beautiful sunshinin' day, and small town hospitality, that when a neighbor stops by around lunch time, you can offer them a meal. ♥ Loving December Blessings!

Today I am Thankful for elves that sneak in and wash sinks full of dishes. Thankful for cut wood and warm fires. Thankful for clean rooms & beds covered in a quilt made out of Grandpa's jeans. Thankful for neighbor whose Christmas Candy....was a lasagna....on a night you really didn't want to cook.

 Today I am THANKFUL for friendly small town customer service, hard working, firewood packin, room cleaning, bed makin lil' boys, and hours spent in good company.  

 Tonight I am THANKFUL to hear the sound of a 97 year old man singing a lullaby to his beautiful bride of 60+ years. What a blessing to witness a true love story.
